How To Tell If There's Trans Fat In Food

Lately I've been getting some questions about how to tell if there's trans fat in food - especially for items that claim there is zero trans fat per serving. You've heard about the food manufacturers' sneaky little trick right? It is partially the USDA's fault because they do not require companies to label a product as having trans fat if it's less than 0.5 grams per serving. So what do many food companies do? They increase the number of servings per package of course so that each serving is less and therefore contains less trans fat. So, for example if a box of your favorite cereal used to have 0.7 grams of trans fat per serving and they used to claim there were 10 servings per box, they don't have to change the recipe to have less trans fat - nope, they just change the serving size - so in this example, if they change the number of servings to 15 per box (and each serving is now about 1/3 less). They then don't have to claim their product has trans fat because it's now "only" 0.47 grams of trans fat per serving. This has actually happened on thousands of products and is one of the main reasons why so called "serving size" has drastically decreased on many processed foods. This is absolutely ludicrous in my opinion and very unfair to the American consumer who is trying to eat healthier and avoid the trans fat which is a toxin - but for now that's what we have to live with (I am speaking out about this myself and maybe you'd like to to).

In case you haven't been reading my previous posts, trans fat causes diabetes! In fact, it was the introduction of trans fat into the food supply in the 1920's in the form of margarine and Crisco that caused the sudden appearance of type 2 diabetes in the 1930's - did you know that type 2 diabetes did not exist before this time?

It is imperative if you are a diabetic that you learn how to detect trans fat in food. This is because trans fat not only causes diabetes, it also prevents you from having the ability to reverse diabetes naturally. So I want to explain exactly how to determine if a food contains trans fat so you can avoid eating trans fat completely! Please understand that this isn't like eating ice cream where it's ok to eat it occasionally just not all the time (well, depending on whether or not it has high fructose corn syrup and/or other harmful foods). Trans fat is like eating POISON! and you should avoid it 100% of the time.

First, I need to point out again that ALL canola oil contains trans fat. It doesn't matter if it says it is expeller pressed and/or "organic" and/or "all natural" and/or "non-gmo" (the vast majority of canola oil is genetically modified rapeseed oil). ALL canola oil contains trans fat due to the fact that it is a strain of rapeseed that was specifically cross-bred to contain high levels of omega-3 which gets converted to trans fat when it is heated during the processing of the canola oil. This includes the lower heat "expeller pressed" processing you so often see on foods marketed as being "natural." Expeller pressed is still hot enough and kept hot for long enough that the omega-3 is converted to trans fat in high percentages. This has been independently verified by university researchers and you can end up with a product that has several grams of trans fat per serving. So, to avoid eating trans fat, you need to eliminate ALL canola oil from your diet.

Second, I want to explain what to look for on a food label. Because of the "per serving" issue, ignore the claims under the nutrition part of the label concerning trans fat. Instead, look at the list of ingredients very carefully - I have actually gotten into the habit of carrying a small magnifying glass into the store with me when I shop so I can more easily read the sometimes very fine print on the ingredient label. If the ingredient label lists "partially hydrogenated" anything, it has trans fat! Don't buy it! If it says "hydrogenated" anything, same thing. Don't buy it! And again, if it says canola oil, don't buy it as it does have trans fat, very possibly high levels of trans fat in fact! Occasionally, you will see canola oil labeled as "LEAR" or "low erucic acid rapeseed." This is just another name for canola oil (they changed the name for marketing reasons) and you should avoid it 100% of the time.

Ok, this should help you know exactly how to tell if there's trans fat in food. Of course the best way to avoid trans fat is to eat more fresh food or "whole food" like fresh organic vegetables, fresh organic fruits, fresh organic meats, and fresh seafood like wild salmon and shrimp. Most of your trans fat will be hidden in processed foods that come in a box or a can and in those hot food bars and delis so popular in the grocery stores these days. Try a food bar at a natural grocery store that is committed to no trans fat.

Optimal pH To Cure Diabetes: Acidic Body vs Alkaline Body

Diabetics have one thing in common with cancer patients: they tend to have a an overly acidic body. It is thought by many who understand that "food is medicine" that the root of all disease is an acidic body. Furthermore, those same people believe that to cure whatever ails you must get the pH of your body back in balance - you must achieve a slightly alkaline body of about 7.2.

The link between the pH of the body and diseases like type 2 diabetes is not a new idea. In 1933, Dr. William Howard Hay stated,

"...we have allowed our alkalies to be dissipated by introduction of acid-forming food in too great amount... It may seem strange to say that all disease is the same thing, no matter what its myriad modes of expression, but it is verily so."

For decades this concept was largely lost but thankfully it has been resurrected by the alternative health community. Once again, we are beginning to understand how important it is to keep a healthy pH in our bodies.

We now know that most diseases thrive in an acidic body. Harmful bacteria, fungus, and parasites all do well if the body is acidic. In order to cure diabetes (and many of the complications of diabetes such as inflammation), you will need to work on changing the pH of your acidic body back to a more alkaline level.

High acidity causes insulin resistance! It is imperative that you get your body to the right pH if you want to reverse your diabetes.

The magical optimal pH seems to be 7.2 which is slightly alkaline.

Here are the ranges:

0 - 6.9 = acidic
7 = neutral
7.1 - 14 = alkaline

The acidity or alkalinity of the body is determined by measuring the pH of the body. You can get test strips from your local drugstore that you can dip into your urine and saliva and determine your pH. The pH scale ranges from 0 - 14 with a score of 7.0 being neutral. Lower than 7 and the pH is considered "acidic" and higher than 7 and the pH is "alkaline." Remember, your target pH is not neutral but slightly alkaline - or about 7.2.

A pH below 6.5 is considered really low (way too acidic). A pH below 6.0 is considered extremely too low (extremely and dangerously too acidic).

It is very important to note that the pH scale is NOT linear - it is logarithmic (like the Richter Scale used to measure the intensity of earthquakes). This means there is a difference of 10 times between a pH of 6 versus a pH of 7.

Take a look at this:

pH 6 vs pH 7 = 10 times different (pH 6 is 10 times more acidic than pH 7)
pH 5 vs pH 7 = 100 times different (pH 5 is 100 times more acidic than pH 7)
pH 4 vs pH 7 = 1000 times different (pH 4 is 1000 times more acidic than pH 7)

pH 7 vs pH 8 = 10 times different (pH 7 is 10 times more alkaline than pH 8)
pH 7 vs pH 9 = 100 times different (pH 7 is 100 times more alkaline than pH 9)
pH 7 vs pH 10 = 1000 times different (pH 7 is 1000 times more alkaline than pH 10)

A 0.1 difference in acidity is actually more significant than you may think.

Also note: the term "alkaline" (a pH greater than 7) is sometimes referred to as "basic."

This also means that one point on the pH scale is hugely significant! The difference between 7.2 (your target pH) and 6.2 (way too acidic) is 10 times! Remember, even a tenth of a point is quite significant. It also means that the human body, and all life for that matter, can only operate within a rather narrow range on the pH scale. Relatively small shifts within this narrow range for life can make the difference between a healthy person and one that has diabetes and/or other diseases.

Basically, I'm trying to stress that the pH of the body really matters if you're serious about reversing your diabetes!

The main way you can get your body to the right pH is to eat the right foods. Some foods will cause your body to become very acidic. Other foods will help your body to move more toward the alkaline side. You can't cut out all the acidic foods by the way because they have nutrients you need. However, there are certain foods that are SO acid producing, you really should avoid them. Plus, you need to learn how balance things out and keep your body slightly alkaline - it's not just what you eat but also the combinations that you eat and the quantities of each that you eat.

Why Is Whole Foods Using So Much Canola Oil?

I went shopping at Whole Foods recently. I've been reading about how much canola oil they use in their hot foods and in their private label products. I had some extra time to browse so I really paid careful attention to the ingredient labels while I was there. I am sad to report that Whole Foods puts canola oil is most all of their products! It is alarming, in fact, how wide spread this noxious ingredient  really is!

I recently wrote about the dangers of canola oil to the diabetic because of trans fat and other reasons. I entitled the article, "What Is Canola Oil and Should Diabetics Avoid It?" This resource has so much more information than I have on this site about the oils you should be avoiding if you want to reverse your diabetes and the ones you should be consuming to help with the process of curing your diabetes and healing your body.

Back to my Whole Foods "safari." I looked at virtually every salad dressing they had in the refrigerated section near the veggies. It all contained canola oil! This was mostly private label stuff. Then I looked at the pre-made sauces too - same thing - loaded with canola oil - in fact canola oil was often the first ingredient! Then I hit the meat counter and took a look at the sausages - the sausage that they grind/mix there in the store had guess what? More canola oil! Why?!? Why do they have to put canola oil in sausage?!? Good grief! Even worse... they add it to their smoked salmon spread. What's that about? Does that stretch it? Stretch the expensive salmon with super cheap canola oil so they make more profit?

You guys do realize why food manufacturers love canola oil so much, right? It is because it is dirt cheap! In other words, if they can load a dip or sausage or a salad dressing or a pre-made sauce or any other food item with dirt cheap canola oil and still sell it at a high price, they'll make a higher profit margin.

Next, I wandered over to the non-refrigerated isles of the store. It seemed like every item I picked up contained canola oil. Whole Foods, what are you doing? You should be a leader in not having canola oil! I saw more canola oil in their private label items than in the other brands they carry.... I kid you not! I could hardly believe that one.

Then I walked over to the hot foods section. It smelled delicious of course (I was getting hungry by this time) but sure enough when I talked with the employees, they told me it contained canola oil. I didn't buy anything because when I hear the words "canola oil" I think "POISON!" (and so should you!)

Anthocyanin - Why Diabetics Should Eat A lot Of It

About a week ago, I posted a long article about why diabetics should choose blue corn chips over yellow corn chips and white corn chips. In that article, I reported that blue corn has a very powerful antioxidant of the flavonoid variety called anthocyanin (anthocyanidins when they are not coupled to a sugar). I want to discuss anthocyanin in more detail because I think it is something every diabetic should know about. Moreover, I think every diabetic should make sure to include lots of foods that contain high levels of this antioxidant in their diet as often as possible - this is one of the important steps to take to reverse diabetes.

As I reported in the previous article, anthocyanin works to strengthen the walls of small blood vessels in the body, especially the really tiny capillaries like the ones you find in the eyes and lower extremities. What I did not report last week is that gastro anthropologists now believe that human beings used to get FAR more anthocyanin in our diet than we do today. When humans were collecting their food from hunting and gathering food directly from the wild, we were eating much higher quantities of foods that contain anthocyanin. Wild berries are exceptionally high in in this miraculous antioxidant and it is thought we ate a lot of berries and other fruits that contain high quantities of anthocyanin. Probably one of the healthiest things you can do for yourself (and your family) is go out and pick some wild berries and eat until your heart's content (and save some for the winter too).

Besides anthocyanin, there are many other healthy reasons diabetics should consider picking wild berries. In fact, I posted an article about this last July called, "Why All Diabetics Should Go Berry Picking This Weekend." Of course, berry season is upon us again so I suggest you go out and get some of nature's most delicious "medicine" to eat fresh now and also stow away some in zip lock bags to throw into the freezer for later. Plus, have you checked out the prices of organic blackberries lately - almost $5 per pint. Don't get me wrong - I support local organic farmers whenever I can and I totally understand the reasons they have to charge more and I believe it is more than worth it to pay extra for organic, but there's also something very satisfying about gathering an expensive food from the wild for free - and knowing it's even healthier than cultivated organic food! Check with local nature groups, parks, and interpretive centers as you can often find free guided tours showing you how to find wild edible berries this time of year. Your local boy scout leaders are also usually really good sources for information on edible wild foods in your specific area.

Back to anthocyanin... one of the most common complication of diabetes is vessel damage and weakened circulation. It is the high blood sugar that causes this damage. It eats away the lining of the vessels, weakening the the smallest ones faster. Too much of this happening in the eyes can cause blindness, aka retinopathy (damage to the retina). There are also many small vessels in the feet and if they are damaged it is quite easy to get ulcers in the feet. Sometimes when there isn't enough blood circulation in the feet, it can lead to and amputation of the foot and the lower leg (they usually cut the leg just under the knee). This is devastating of course and I really urge all my fellow diabetics to eat plenty of foods that contain anthocyanin.

Okay, so... Which foods contain the most anthocyanin? Basically you are looking for dark blue, deep red, and purple food. Dark "bluish" berries are #1 on the list. Berries like blueberries (and the closely related bilberries found in Europe - YUM by the way), blackberries, etc... Now, edible red berries like raspberries and thimbleberries (excellent one to hunt in the wild because they never sell these in the store) also contain a good amount of anthocyanin. Blueberries are my personal favorite when I purchase them but nothing beats the variety you find out in nature - berries the stores don't even carry. In fact, wild berries even contain more variety of anthocyanin than cultivated berries. Eggplant, cherries (the darker the better), pomegranate, plums, dark grapes, red wine, blue corn, black beans, avocado, sweet potato, purple cabbage, beets, and even purple potatoes (which you can often find at a farmer's market) contain large quantities of anthocyanin. Organic varieties and heirlooms tend to have more anthocyanin.  Even wild tomatoes of long ago had significant quantities of anthocyanin. The dark pigment in black pepper is also due to anthocyanin.

Remember that if you want to reverse diabetes through natural means, you need information that you're not going to get at your doctor's office. While I'm glad you found this article that I've written, this is only one piece of the puzzle and you would benefit greatly from a comprehensive report that would detail all the information you need. Food Is Medicine For the Diabetic

Hippocrates of Cos, an ancient Greek (half Phoenician) physician who is recognized as the father of medicine, is famous for saying: "Let food be thy medicine and let thy medicine be food." This ancient wisdom is a deceptively simple statement that has a PROFOUND meaning - and a meaning that we seem to have lost sight of in our modern day society. We tend to associate food with personal pleasure, festivities, comfort, and socializing. We treat food as a source of entertainment and will go to great lengths to pleasure our palate with our favorite foods. Through all of this, we sometimes forget that the food we consume is really nothing more than organic chemicals mixed today unfortunately with industrial toxins. When we eat, food interacts chemically with our bodies, as do the industrial toxins, at both the cellular and molecular level. This is why food is medicine, or at least it has the potential to be if we eat the right foods. If we eat the wrong foods, and the wrong industrial toxins, we create diseases like diabetes and cancer inside our bodies.

Let's boil our feeding habits down to the underlying basics. Food is basically composed of organic chemicals (if you know how to eliminate the industrial toxins and that doesn't mean just eating organically, although that helps a lot). Our bodies are made of organic chemicals. When chemicals combine, they react with each other. When the chemicals from the food we eat combine with the chemicals in our bodies, they react like any other chemicals would do.

Glucose metabolism is a good example of a complicated chemical reaction that takes place between the chemicals in the food we eat and the chemicals in our bodies. A malfunction can occur at any point during glucose metabolism. If the chemicals in our cell membranes don't react properly with insulin, the chemicals in our body responsible for helping our cells accept glucose from our food, we develop what we call type 2 diabetes. When this happens, the nutrients from our food can not enter our cells properly and we get an increase in blood sugar as a symptom because it isn't being taken up by our cells properly.

Food has the ability to make radical changes in our physical bodies. This can be both good and bad, depending on what we eat. Food can affect our brain functioning, our mood, our ability to recall stored memories, our propensity to develop cancerous tumors, how well our cell membranes respond to insulin, and many more bodily functions we seem to take for granted until they don't work well anymore. After all, we tend to think of food as just a way to fill our bellies and stomp out those hungry pains. However, it's important to remember that when we eat we start chemical reactions inside our bodies. Unfortunately, food science in not taught in medical school. Moreover, the study of nutrition is not stressed in required coursework either. The focus of modern medicine is on pharmaceuticals and surgery. The focus is not on the effect of food on our bodies. Things are beginning to change in this regard but this change is "slow as molasses" as the old saying goes. If are hoping to cure your diabetes, you will have far more success using alternative medicine to reverse diabetes.

You can think of food as very powerful chemicals that have the ability to reverse serious illnesses such as diabetes. In this sense, food really is medicine. It really is that simple. However, you should also keep in mind that food can poison your body if you eat the wrong food, the wrong industrial toxins, especially if you do so on a continual basis over a long period of time.

When I was diagnosed with diabetes, my doctor immediately started talking about the various medications he could give me and how those medications might combine and interact. He then asked a nurse to talk with me about how to check my blood sugar. Neither of them talked to me about diet! Almost as an afterthought, the nurse did mention there were some free "diabetes nutrition classes" at the hospital I might be interested in taking. That's it. That's all they said about food. That is all that was said regarding food from my primary health care givers. In retrospect, knowing what I now know, this is absolutely alarming!

Okay call me bias here but maybe we should be listening to research scientists with serious data to back up their claims rather than doctors whose education in medical school is partially funded by BIG PHARMA. Modern medicine is "miraculous" in some ways, especially if you land in the emergency room after a bad car accident, but both doctors and patients alike could learn from the ancient wisdom of Hippocrates when it comes to curing diabetes and other major disease. If you or your loved one has been diagnosed with diabetes, it is very important for you to be pro-active in your own health care. For many people, it is possible to reverse diabetes by eating the right food and eliminating the industrial toxins that are in our modern food supply. If I followed the diet that the doctor's office gave me, endorsed by the American Diabetes Association, I know I would not have been able to cure my diabetes. How do I know this? Well, because everyone I know with diabetes who follows the modern medicine approach gets progressively worse but when they switch to a diet that follows this plan to reverse diabetes naturally, they get better and most cure their own diabetes. What makes it even more evident is when these people (including me) go back to their doctor a few months later and they run an HgA1C test (the glycated hemoglobin blood test) and it comes back normal. The doctors all seem so shocked and amazed like it has never happened before but in reality it is happening more and more.

Reverse Diabetes Naturally - My Personal Experience

Important: Please note that I wrote the post below going on four years ago (May 15, 2010) and I had been diagnosed with type 2 diabetes only a few months before. I was already heavy into research on how to reverse diabetes but I definitely know more now than I knew then. Be sure to read the important update at the end.

Here's my personal story:

I'm a newly diagnosed diabetic and I'm determined to reverse diabetes naturally through diet, exercise, finding ways to reduce my stress, and other natural means.

I went to the doctor recently for a general checkup. It had been about 3 years since I had been to the doctor. I know this is bad but I'm more of a heal yourself kind of person and I'm basically terrified of any kind of medical procedure. Anyway, they drew blood and I was diagnosed as a type 2 diabetic. Not only was my blood sugar over 200, my HgAc1 test came back initially as 10.6! In other words, it was considered severe diabetes. This was very unpleasant news to say the least! Quite frankly, it took a couple of weeks I think for this news to fully sink in. I think I was in denial at first. Diabetes runs in my family on my father's side with my father having the worst of it. He had terrible circulation problems in his feet and legs and it affected his eyesight as well (so much so he had trouble driving in the end). He didn't take care of himself. He almost never got any exercise and basically refused to change his diet, although we pleaded with him to do so. He died at the young age of 49. I do not plan to follow in his footsteps.

On the other side of the coin, my father's mom, my paternal Grandmother, always took very good care of herself. However, she was still diagnosed in the early 70's with what they then called "borderline diabetes" which they commonly refer to now as "pre diabetes." Her blood sugar was a little higher than the high end of the normal range but not high enough to take insulin. These days most doctors would have probably put her on oral medication but in the 1970s doctors still prescribed dietary changes sometimes rather than automatically doling out prescription drugs.  I was just a kid then but I remember how determined she was to not let it get any worse. She started walking more and she closely watched her diet. Not only did she not let it get any worse, she reversed her borderline diabetes. My Grandmother is now 90 years old and she's in terrific shape for her age. Her blood sugar is completely NORMAL now every time she goes to the doctor for a check up they have been for years. In fact, she's often on the low end of the normal range. She's very active for her age and stays mentally sharp. She goes to church every week, does her own shopping, keeps up with all her own affairs, loves to laugh and spend time with her family, and does many other activities with friends. She's also a joy to be around --- and she's diabetes free!

My Grandmother has always been an inspiration to me. I'm determined to follow in her footsteps and reverse my diabetes naturally. I would love to hear from other people who have reversed their diabetes with diet and other natural ways. Please leave me a comment.

Update: I HAVE reversed my diabetes using this basic method even though this method is a bit more refined through research and my blood tests have come back normal every time I've had it tested.
